  • 100 g rice noodles

  • 1 tbsp green curry paste

  • 1 can (400 ml) coconut milk

  • 1 cup mixed veggies (zucchini, eggplant, snap peas)

  • 100 g tofu or shrimp (optional)

  • 1 tbsp soy or fish sauce

  • 1 tsp palm/brown sugar

  • Basil leaves + lime wedges
